Frozen Lime Pie


This is really all you need. Sweetened Condensed Milk, Frozen Limeade or Lemonade, Cool Whip and a graham cracker crust. I used a store bought one in the interests of time, but you could make your own. You fold the whipped topping and condensed milk together first and then slowly and gently fold in the limeade in as well. Once it is all incorporated, put it in the pie crust and toss in the freezer overnight. It's a SUPER yummy and refreshing treat!


Turkey Sliders and Krispy Kale.


I had to start my summer yummies with a little beverage. I took a little white wine, lots of ice, some tonic water, some lemon and some strawberries. Mix it all together and you have a lovely summer spritzer.

Then I used the above ingredients, some mayo, some fresh sage to mix together and grill into turkey sliders. I didn't measure any of the ingredients, but I think I would have chopped the onions smaller so that they would mix in a little better. I found the chunks a little too big and they drove the burger apart as it cooked.
Then I took some kale and ripped it into bit sized pieces, sprayed it with olive oil, lightly salted it and tossed it into the oven at 425 for about 15 minutes or so and it came out krispy and better than chips! What a great way to get some green in your life. My friend, Mary, told me about it and it was AMAZING and will be on the menu often in the future. For those of you moms out there, my friend says her kids LOVE the Krispy Kale.

Sandwiches


Mmmmm.... Sandwiches are so good. And sometimes I forget that. Lately, I've been craving them on a regular basis. And if you read my other blogs, you know that I attacked the above sandwich in NYC. It was one thing that I knew I had to have in New York. My sandwich was just a simple salami and provolone with lettuce, tomato, mayo and some brown mustard. Never mind that gorgeous Kosher pickle. So, what's your favourite sandwich?! Please post it in my comments, I am super curious to see it and maybe try it... But I am also want to say that I REALLY love a good egg salad on soft multi-grain bread with alfalfa sprouts. Mmmm...
