Fish Tacos

So this is the final product. It is baked tuna steak on a whole wheat tortilla. I have some pre-shredded cheese there, some yummy black beans, mango salsa and a little bit of sour cream. SO YUMMY!!!

This is the mango salsa, hopefully close to the idea that I stole from my friend Sophia.

The mango salsa had green onions, avocado and mango, that's all it is!!

Here is what I did for the whole thing:

Tuna:

I put the tuna on a baking pan, topped it with a little oil (olive oil), dill and sea salt. I tossed it in the oven at 375 F and let it bake for about 30 minutes or until it was cooked through. I know that tuna doesn't have to be cooked through, so you can do what you like as far as that is concerned.

Mango Salsa:

You can see what I put in it in the picture above... the only things I have to add is that you need to chop up the components into small pieces (don't mush the avocado) and that you might want to throw in some cilantro, or hot peppers, or lime juice to give it a little more spice etc.

Black Beans:

I know, I know... how hard can this be?! hahaha. I took a simple can of beans, tossed it on the stove and threw in some sprigs of cilantro and some spices (I used Slap Ya Mama! Hot Spice) and let it simmer on the stove. YUMMY in my tummy!!

Enjoy... and Happy Eating!!

  2. hahahaha I got the spice when I was in New Orleans. They had the best hot sauces down there, but I got the dry spices instead of the sauce.
My friend Sophia suggests putting red onion, garlic and lime juice into the mango salsa.
